ALMOND MILK/ALMOND CREAM
Makes 1 qt
1 cup whole raw almonds, soaked in 3 cups of filtered water overnight or for the day, drained and rinsed until no color drains
3 cups filtered water (not all may be needed, depending on if you want cream (1 ½ cups water) or milk)
3 dates, pitted ( I personally only add 1 but starting out on raw 3 is more like “real dairy” milk and will taste richer so use 3 if you are not raw initially and experiment with what works best for your body and tastes).
½ tsp. Vanilla extract (optional and not necessary)
1. Put almonds in a blender with the water, dates and extract if desired and puree until smooth and creamy and no chips of almonds are remaining.
2. Pour through a fine mesh strainer or a mesh nut bag (available from Kimberly Mac) to remove almond pulp. Put remaining almond milk in a glass jar and cover.
3. Save almond pulp in freezer until you have 6 cups to make almond bread (another class!)
Zucchini Noodles Pesto
Serves 6

Pesto Ingredients:
¨ 1 bunch of fresh basil, washed and dried
¨ 2-3 Tbsp fresh lemon juice, to taste
¨ 2 cloves garlic, crushed
¨ ½ tsp sea salt, or to taste
¨ ¼ cup pine nuts
¨ ¼ cup extra virgin olive oil

Noodle Ingredients:
¨ 6 medium zucchini, peeled and cut in three inch sections, with clean straight ends

Process the Pesto ingredients, except the olive oil, in a food processor until well processed but still a little chunky. While processing, through the top, slowly add the olive oil and process until just mixed. Transform the zucchini into noodles using a vegetable peeler, chef’s knife or spiral slicer. Toss the zucchini noodles with a pinch of celtic sea salt to allow them to “weep” the juice. Squeeze and drain excess juice. Coat well with Pesto and serve immediately. Serve with extra Pesto sauce on the side.
NOTES:
Remember that if you are just starting on a raw food diet, your body may be cleansing, therefore, you may be colder this year than you have been in the past. This usually passes as your body gets cleaner and becomes more balanced. In the meantime, drink lots of warm tea, and take a hot water bottle to bed to keep you warm. There are also a variety of foods and spices that are warming: Cinnamon, nutmeg, cloves, cayenne, cumin, ginger, garlic, fennel, chives, green onion, dates, honey, carrots, beets, daikon radish, tomatoes, mustard, onions, oily nuts and seeds and corn, millet, buckwheat and rye. Buckwheat is an exceptionally warming food. You can make the buckwheat cereal or granola bars or granola crunch and keep on hand.
